Five ordinary causes

What this usually turns out to be

Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.

  • Spills on the cavity floor

    The overwhelming majority. Sugar and fat left from a previous bake smoke long before anything is wrong with the appliance.

  • A new oven burning off

    Manufacturing residue on elements and insulation. Unpleasant, expected, and gone after a couple of hot empty runs with the room ventilated.

  • Self-clean residue

    Ash left in the cavity after a clean cycle smells on the next bake. Wipe it out once it is cold — the cycle turns soil to ash, it does not remove it.

  • A cooling fan that is not keeping up

    Published as its own condition. Heat that should be leaving the cabinet is not, and the smell is the cabinetry rather than the food.

    Wipe out after any clean cycle

    Ash is what a self-clean leaves behind, and it is what smells on the next bake.

    Note whether there is a code

    Smoke with an over-temperature or fan condition is not the same page as smoke with no code, and it changes the urgency completely.

    Ventilate and run empty

    For a new appliance: two hot empty runs with the hood on. If the smell persists after that, it is worth a call.

First: is anything overheating that should not be

Smoke with a code for cavity over-temperature or cooling fan supervision is a different situation from smoke with no code at all. If the oven is heating with nothing selected, switch it off at the breaker and call rather than working through this list.

Most of it is not the oven

Spills on the cavity floor, ash left after a clean cycle, and the burn-off on a new appliance account for nearly all of these calls. All three are ordinary and all three are free to deal with. What separates them from the rest is that they get better rather than worse, and none of them comes with a code.

The two that are the appliance

A cooling fan that is no longer moving enough air, and an element or relay that stays powered. The first is published as a condition, the second is what the over-temperature condition exists to catch. Either of those turns a smell into something to act on the same day.
